An incredibly minute/nitpicky one for a change - the use of the "curly" apostrophe ("everyone's" in the bottom loading hint) is not consistent with the other times the standard straight apostrophe ( ' ) is used instead (see the top three loading hint examples):

Hey smlrfrt, what version are you using to check all this? It seems there were at least 3 new versions since the original release, and two of them are from yesterday.

You should check out if any of your bug reports were already addressed and let us know.

I'm on what GOG refers to as version "4cc6dad5", which should be the latest one(?).
If there's a way to check the actual version number ZA/UM is using internally I've not figured out where one would find that yet. There's nothing in the main menu, the sub menus or the in-game help menu.
"File version" in the disco.exe's file properties says "2019.1.0.11155" which could be it, I guess?

I wouldn't hold my breath for the little things like typos, misspellings, grammatical errors and whatnot to be fixed in the short or mid term anyway. Experience with similarly text-heavy cRPGs shows that those usually get corrected last or in the worst case scenario, never.

Corrected typos, misspellings and grammatical errors is all I could check for anyway, since I apparently was spared all the game breaking bugs (like the shoe thing or the game not starting at all, even though I'm on Win7) so far.
Sometime next year at the earliest might be a good time to start checking for corrections, but for now I'll stick to reporting on the things I come across during the current playthrough.

No, that is just the version of a Unity engine file.

Don't sweat it, at least in regards to text-related bugs/issues - the changelog for "c50f6815" just further confirms that correcting typos, misspellings, bad grammar, etc is definitely not high priority for the ZA/UM folks, at least for the time being. Which is fine, since there obviously are quite a bit more pressing issues to fix.

A task-related bug for a change - 'Make truce with Cuno' lets you try to get on Cuno's good side again by offering him either alcohol, cigarettes or speed.
When choosing the 'speed'-option which, according to Cuno's response, is not an acceptable offering and therefore should result in the appropriate 'failure' condition and take you back to the initial alcohol, cigarettes and speed selection again (like on the right hand side, after having tried the 'alcohol'-option) it instead presents the 'success'-dialogue options as if you went for the 'cigarettes'-offering (cigarettes being the only acceptable one of the three):

There's obviously something amiss with the wording of the CRANE CONTROL PANEL's introductory text after having moved the container. Especially when compared to the text before moving the container and interacting with the panel for the first time (on the right in the screenshot).
"are" being obviously out of place (should be "The words *Allumer* and *Éteindre*") seems fairly certain to me, but what the remainder of the text is actually supposed to read like I could only speculate. Definitely doesn't make much sense in its current, clearly incomplete form:

My resolution is busted. I Was playing along fine at 2550 or something, whatever the highest option was (I can't check now, because of this very problem), which I set at the beginning of the game without any issue. I've played to about the end of day 2. Then I went in to the settings menu and clicked on the resolution option, at which point only 1280x720 showed up in the list, and the game promptly switched to that resolution. Now I cannot change it back, and the only option present when I try is 1280x720 and nothing else. And 1280x720 looks absolutely terrible. I'm not playing the game through at that resolution.

I've got the most recent available version on GOG, fully updated, and I understand some recent patch notes claim to have "fixed the resolution switcher", but clearly they haven't fixed it enough.
The colour of the SMOKER ON THE BALCONY's shirt doesn't appear to match the described "(not-quite-as-snow-)white" - neither in the portrait nor on the actual in-game model?
