This has probably been discussed many times before, but as a new player to the series (so far D1) what does it take to topple the capital city garrisons? D1 and D2?

I played only Disciples: Sacred Lands and think it's just impossible and it's meant to be this way. I've finished two Sagas: the Empire and the Undead Hordes and you never asked to destroy the capital city. I'm sure it's the same with the Legions of the Damned and Mountain Clans because they are arch-nemesis of the Empire and Undead Horses, respectively, so their campaigns are (more or less) mirrored. I've check several single quests and the objective is never to destroy the capital so the final answer is: you can't do that (at least in the first game)
In Disciples 1 taking out a capital city garrison is incredibly difficult, and I only managed to do it on the final Empire mission. Aside from naturally having my disciple and all units max level, I used spells to max out armor before the fight, then used the mass-healing unit to heal up the damage the guardian did each turn. Even with this it still required me attacking twice in a turn because the first fight ended in a draw due to taking so long. I can't imagine doing it with anything other than the Empire due to the necessity of mass healing during the fight.

In Disciples 2 it's much easier to take out capitals, since your units can gain levels pretty much indefinitely to improve their stats (in D1 once they reached their top upgrade that was it), which allows you to create some insanely powerful units. In the final Clans mission of the expansion your goal is actually to destroy the undead capital, and just before you attack it they actually throw a custom boss enemy at you since by that point the capital guardian itself isn't all that much of a challenge.

I thought it might be possible in D1. I was thinking along the lines that it would take a series of attacks from multiple hero groups upgraded at least to carry a full party. Never imagined it could be done with just 1 party!

Ok, I was playing on hard difficulty which was... well... hard ;)And seeing that you barely proceed in your mission goals made me think that's impossible, even with the Empire. It's nice to learn something new :)
In D2 its, except for the dwarves, all about surviving the first salvo of the enemy guardian. An empire party can then simply heal the guardian's damage, an undead party can paralyze thr guardian and a demon party can petrify the guardian. To survive the first salvo you just buff your units' armour with potions and spells. The dwarves unfortunately have to outlast the guardian by attacking with a heavily buffed(armour + damage). in the campaigns the capitals can fairly easily be taken out no later than the 4th level, or even sooner if you have enough patience and/or can boost your core units armour to 90ish.
