When I try to set York's costume in the menu, it isn't changed in-game.

Does somebody have the same problem ?

You can pick only one add-on suit. When you do, the green-tie one in your suitcase is replaced by the add-on one.

I mean: do the costume show up on the character model during gameplay. Must I finish the sequence just after the car crash (the beginning) ?

You must have acces to your suitcase :) I believe it's somewhere on the crash site, along with your toolbox.
And yes, once you equip a special suit, it's visible on your character. Shame most of them look so lame :)

Thanks. I didn't know about the fact that it was accessible during the prologue. I would have liked to play the first section with the special ops costume.

You can always re-play a chapter from chapter selection screen (for extra money and items) or re-play any otherworld section from round portal near said section enterance (for even more extra money and a trading card :)

One more hint. Remember that cool car York had in the intro? You can get it back :)
And don't forget to clean your Spec Ops suit or it'll get stinky :)
