Will there be a switch in the settings to switch off the hit scores displays on the enemies during combat?

You can always play with HC-mode.

HC = Hardcore, refers to no HUD of anything like ammo count, hit markers, health etc. But it's not confirmed this game would have HC mode. Maybe in the settings. But cyberware like the grip and optics give information of your ammo count and other HUD statistics... it's part of the game mechanic so I don't think so. Maybe you can turn off other things like your level and stuff.

There will be photomode so that would definitely turn off HUDs and you can see your V in 3rd person as well.
