When people submitted this bug on steam forum, the patch rolled there a few hours later, fixing the issue. Apparently devs don't care about playerbase outside steam.
I think this has more to do with the publisher, Devolver Digital. Developer is very probably not the one pushing the new builds on every available platform.
I think all parties involved would be interested for the update to reach GOG else people will just refund. This one may reach GOG in time before the 30 days window, but it casts doubts on the delay / existence of future updates, after the refund window will pass :/
If I were a manager at GOG, I would be pissed.

I had to refund unfortunately. While the game is neat, addictive, and kinda cute, it's more like a mobile game and not worth the asking price considering everything. I'll pick it back up when the price plummets.

I'm not worried about the content, honestly. I'm ready to pay just for the visuals and the music, but I'm waiting for a patch. :)
