So I have a copy of Consortium that I want to gift to my friend, but she owns a Mac. Does Consortium run on Mac, because when I looked at info under OS on GOG all I can see is Windows.

It's a Windows only game. No GOG support or installers for any other OSes. Technically she could install & play it via Wine or CrossOver.

Oh, so it works on Wine. Okay, well, maybe I'll wait on gifting it til I've had a chance to work with Wine myself. I knew Wine was for Linux, but didn't realize it was also for Mac. Cool, thanks for the useful link.
The most recent change to this game claims a fix for Wine. It does indeed fix the main problem (no visuals at start of game, or apparently any time you enter limbo), but for me, the game still does not work (it always goes black after a minute or two of gameplay). So saying "it works with Wine", as with any game, may vary with Wine version, hardware, and phase of moon.

Removing the visual distortion effect fixes the black screen. To do this you can either set r_signal_fx "0" in the in-game developer console or add it to config.cfg (although the config file gets overwritten sometimes).
