jabrwock: I had the same problem with Cataline. Had to go into security settings and give the game full disk access.
I tried this, but it did not fix the problem for me on Catalina (10.15.5).

I found a relevant bug posted on scummvm:

The described workaround that did work for me is to launch the game from the ScummVM launcher.

I had the same problem on my Mac. If I launch the game using the Blade Runner icon I can't save, but if I launch it through GOG then the save function works.
