OP is talking about extra options that you can choose if you want, or not if you don't. I don't think anyone is pushing every game to be Tell Me Why. (Nice game tho, although a bit too Dontnod's cookie cutter recipe -- social drama and for some inexplicable reason some supernatural elements. But I want to go to Alaska for the scenery now.)
In Cyberpunk 2077 you can have a female body with any breast size you choose, male genitalia and a male voice if you like. That doesn't stop you from choosing a male body, male genitalia and male voice. More options bring more choices, not limitations.
I would probably not pick a non-binary option myself, but I am with OP on this one. More options, more choices are good. "We want more" is good for the games. It is a different matter when people say "you can't have this in games". Yes you can, that's why games exist. I am always pro-more stuff in games and anti-this should not be in games. You, unfortunately want fewer options in games, so in my opinion you are wrong.
