I've been playing the IE games for decades, and they've all had basically the same installation folder layout: Character folder, Save folder, MPsave folder, Sounds, Scripts, Override; there's a config.exe for option not available in-game, all that good stuff.

So why does BG:EE's have ...literally none of that? Where do I put portraits, sounds? Where do I put mod files? Where in the Hell are my saves?

In Documents folder.

Yeah, I have no clue why they messed the installation folder. I wonder if there was any valid reason for it or was it one of the many "fixes" that Beamdog felt obliged to include into their "enhanced" edition.

WeiDU mods can be dropped and installed from the same directory of the game executable, just like the original version. Save files and portraits goes into your Documents subfolder, usually it's "C:\Users\*YourUserName*\Documents\Baldur's Gate - Enhanced Edition\save" on windows.

It's not messed, and starting with Windows 7 it's a common pratice for both games and applications to store non essential files to the user document folder.

It was an error in the quoting and it was easy to get it... fool. Fixed.

It is a mess compared to classic edition. In classic edition everything is in one folder.
