The devs' note on the Steam page is probably the best answer for your question at the moment.

Approximately how long will this game be in Early Access?
“Though Act 1 (the content for Early Access) is defined, Act’s 2 and 3 are work in progress. It’s therefore difficult to predict when 1.0 will launch. We anticipate Baldur’s Gate 3 being in Early Access for at least one year but we’ll have to see how it goes. It’ll be ready when it’s ready.”

It has been in early access since October 5th 2020 so a year and 1/4 so far. I will NEVER buy a game from Larian studios in early access again this is BS!

I bought BG3 a while ago when it was on sale but I haven't played it because I wanted to experience the release and not play through the first act over and over and it has been difficult to resist. I get your frustration but be glad they learned from CDPR's disaster.
