I had followed the GOG recommendations as I had early access. Uninstall, remove all saved games/campaigns. I did not have any mods so that wasn't an issue.

I made a new custom background character and that's when this happened.
When I went to customize appearance, no matter what gender you select, the model shown is male. This is across all races.

Now I know the female models are installed because the non-custom origins have the correct appearance. This wasn't a bug during early access.

Has anyone come up with a workaround or fix?

I've already DL this game and installed it 3x. As I don't have the best DL speeds, I'd prefer not to do this again and wait another day before trying again.

Choose a different body type. There should be 4 (2 male 2 female)

Really what this game needs is to trade in some hair styles for a few more faces.

New faces could take a while (if we get them at all). Larian used real face models and had them act out each expression. They might not think it is worth the effort to add faces, considering the work involved to implement them.

I personally would love to have more faces.

Yeah, I'm not sure how worth it that was for custom characters because all the hair styles and vitaligo stuff doesn't matter when the face looks nothing like who you are trying to make. But it's not the end of the world.

Just pointing out that the face options stand out as a weakness in the character creation process.
