Change your operating system language to PL and see if the game recognizes it.

Ewww. Does $ LANG=pl_PL.UTF-8 ./start.sh not work? Depending on how it's detecting it you may need more than just the LANG variable and that assuming that is the correct Polish locale (locale -a lists all installed locales).
