It's never played nice with Windows 7 :( I have managed to get it to last longer than that but it has crashed three times since I purchased it yesterday. I think it's just something we have to live with.
Hm... that's not good to hear. I planned on buying it again in the hope that it would be stable, but i think i'll wait a bit to see if this is a common issue. Please keep us updated if this gets sorted!

Also, asking the question slightly different, has someone managed to play the GOG version on Win7 without any crashes so far?

Okay, so because i had a free afternoon and nothing to do i took the risk and bought the game today. After playing for about 2 or 3 hours i can say that one time i had a weird color corruption which required me to restart the game. Shortly after restarting the game i got a single crash to desktop (don't know if both events are related though). I played with videos on btw and they worked for me.

So overall the game runs relatively smooth on Win7 so far (at least on my PC), although not 100% perfect and i'm saving VERY regularly just in case.

Downloaded Anno 1602 and had same problem just minutes into the tutorial and program crashed.
I have win 7 64 bit pro running on amd fx series processor with amd r7 200 series graphics.
I went inot gog games folder on my hard drive and used the change button for all users changed compatability for win 98/2000 to win xp service pack 2 with resolution of 1028x768 and since I have played Anno 1602 for 22 minutes without a crash,will report back when I have played longer.

Me. Also, try disabling all movies in the ingame menu.
update on my earlier post
Have played now for nearly an hour with the movies playing and I have used the pause function as well. No crashes at all game plays perfectly except that you have to play from desktop as gog galaxy does not now play the game for you
