I would know if Prince of Persia (http://www.gog.com/en/gamecard/prince_of_persia) require uPlay for play ?

I HATE this software and I wouldn't install this in my computer.

Uplay is specific and unique to Ubisoft's own online store. No uplay software is required for you to enjoy your game DRM-free! :D Hope that helps.
