I have some of those games: a few on Xbox 360, and the others on Steam... or both.

THE BEST (from that list)
Burnout Paradise: It's old, but still really fun, and looks great. Arcade racing action in its finest.
Dirt 3: Great rally racing game, with great graphics and easy to play. A mix between simulation and arcade.
GRID: Also a mix between simulation and arcade, but with super cars. Long races wait for you, and you have to select which region you want to play first: USA (races on cities, mostly muscle cars), Europe (races with style), Asia (mostly drift).
Mini Motor Racing EVO: Best mini racing game I've played, much better than Bang Bang Racing. Really fun, with many options to customize the cars.
(some other random N4S games): The first two Underground games and Most Wanted (the 2005 version) were also great, but they look old for current standards.

GOOD, BUT CAN BE DISAPPOINTING (from that list)
(some other random N4S games): If you have Hot Pursuit (the 2010 version by Criterion), that was good, but it gets old really fast. The best part are the police missions.

VERY DISAPPOINTING (from that list)
NFS Most Wanted: If you have the latest Most Wanted (by Criterion), then wow, this was really boring. It looks good but not great. Nothing much to do too. A big city, drive, find a different car, switch, find a challenge, repeat. Escaping from the police can be challenging, though.
Blur: Too much wasted potential. Too colorful and joyful. Think in Mario Kart but with super cars in nonsensical and boring races... Split/Second was much better (a game released at the same time as Blur). The best part was the intro because of the song (Ecstasy of Gold by Ennio Morricone).
Ridge Racer Unbounded: This one is... lame. Yeah, that's the word. Fast races on "ice", or at least it felt that way. It's average at best. Just arcade and nothing else.

SIMPLY BAD (from that list)
Death Track Resurrection: Just bad, ugly, and stupid. I want my wasted 2 hours back... (:P)

THE "I'VE HEARD THEY ARE GOOD" (from that list)
Death Rally: I bought this during the last Steam sale but I haven't played it yet. It's like Mini Motor Racing EVO, but with guns... Death Race style.
GTR Evolution (RACE 07 expansion): My brother has this one and he said it was good. I've seen him playing it and it's pure hardcore simulation. It looks old, but also fun.

I can't say much about the others in the list because I've never played those.

I totally get my Most Wanted games confused.
Is this the Most Wanted that has SPOILER ALERT the big bridge jump at the end of the story mode?

I actually kind of liked that though I will say it was short and unlike most other NFS games it didn't allow much for just random balls to wall racing and running.

There were two earlier Most Wanted games that didn't have stories but the replayability was limitless because of the track numbers, car options, and ways you could set the police difficulty not to mention you could play as the cops which was always a blast. Sorry if I'm babbling here. :D

Yes, there were more than one Most Wanted. The best was the 2005 version, and also had a little story:
http://www.gamefaqs.com/pc/927142-need-for-speed-most-wanted-2005

But I meant this title (the latest) as disappointing, it was nothing like the 2005 version:

The chance to play Dirt 2 might vanish with GFWL being stopped by Microsoft. I've try to find some info, but that ain't easy, the Codemasters forum is down, rumor has they're in financial trouble and couldn't bear the cost of the forum no more. Other rumors I found on the net: it being remove from the Steam store might a. mean it's taken down to put back an updated version without GFWL, or b. it's taken down as part of phasing out, as they don't want people complaining the game can only be played for a short while anymore.

So putting it on top of your to-finish-list so you have it finished just in case it can't be played no more, would be my advice.

Thank you!
The 2005 one was the title I have and I only wish there was more beyond the story. The hot pursuit games had so many more scenarios and it would have been nice here.
Not much of a racer myself but if I had to play a racer again : http://en.wikipedia.org/wiki/Star_Wars_Episode_I:_Racer
So apologies then : afraid I can't help with your list
My favorite 2 games from that list would be Burnout Paradise and MX vs ATV Reflex. They're both awesome games.
I'm a big FlatOut fan and am excited about Bugbear's next car game which is called 'Next Car Game' apparently, as I say here:

http://www.gog.com/forum/general/next_car_game_the_real_flatout_3/post8

FlatOut Ultimate Carnage is the best, from everything I've read its actually the HD (XBox 360 rather than XBox) version of FlatOut 2 and effectively obsoletes it, FlatOut 3 was made by someone else and they bodged it, I've not tried it yet but its supposedly pretty bad
The original FlatOut is pretty good and not too long either so may be worth a look before you're 'spoilt' by UC

The Criterion games - Burnout Paradise and N4S Most Wanted are pretty damn good too, but maybe suit casually dipping in and out of rather than concentrating on for extended periods
I enjoyed these on my X360:
Burnout Paradise
NFS Most Wanted

for PC:
Sega Rally
GRID
Agree on the FlatOuts, 3 apparently isn't as good as the others but I haven't played 3, so.
The Trackmanias are great if you like completing insane layed out courses which are basically like completing puzzles, as racers I don't find them very good.
They lost me as a NFS fan after Pro Street, they are either too easy or loaded with too much crap that hasn't got anything to do with racing, I have more or less the same oppinion on Burnout Paradise.
Race 07 is best played with a wheel+pedals.
On the negative side, PAM and Death Track Resurrection are both pretty bad, put those 2 at the END of your priority list!
You can't "finish" any of the TrackMania games. If you're trying to get them out of your backlog.. I wouldn't start with those, although I've had the most fun with them out of the games you've listed.

They're purely designed for competing against friends times or worldwide times, and creating or playing custom tracks.
