I have been playing for a few hours now, and have gotten up to the part where I have talked to the Dwarf King and am supposed to explore a mine in the desert.

I have been having a tough time with enemies, and I have had to run back to town to rest a lot. My knight character has 25 accuracy and a sword with +10 attack rating, and expert sword skill around maybe 5 or 6, yet I miss far too often. Very rarely do I get a connecting attack. I swear most of the damage dealt by my party is with my sorceror.

Did I screw up building my characters? All have under 30 accuracy as I wasn't sure how important it was. Or is this just how the game is?

You won't score a hit everytime at this point in the game. Your skill and accuracy are still too low. In addition, when calculating a hit, the game also takes monster armor class into account.

With regards to the mine, the first level is populated only by monsters who are completely immune to physical damage. No matter your sword skill, ooze just oozes back together when you hit it. They are vulnerable to elemental damage, so either you must focus on the part of your attack, or just blow by them until you have more suitable weapons (such as wands or weapons enchanted to do fire damage). I also would not recommend poison damage, as I think they may be immune to that as well.

Thank you for the information. I had a feeling the oozes were immune to physical damage. I have the flame aura spell on my sorceror, so I may try that next time I go there. Are there any other areas suitable for a low level party? I tried clearing out the haunted mansion and was doing fine until I found the wights and barrow wights.

I also tried a barrow, but the gog's were too strong as their death explosions tend to knock out or even kill my sorceror and cleric.

I did manage to clear out the robber cave in Erathia.

There really aren't very many low-level areas in this game. It's much faster-paced than Might and Magic VI. My advice is to keep your money in the bank and then just flit around killing everything you can, until you've levelled up a bit. In this manner you may even complete a few quests that seem too high level for you.

And don't be afraid to dodge past monsters that won't keep you from the objective of your quest. The developers added the invisibility spell to this game, and apparently they intended for it to be used--a lot even though it requires a master level of air magic to be learned.
Casting Bless will also help you hit more often as well. I tend to have Bless and Heroism active at all times, it makes the game a tad bit easier.
The area outside Harmondale provides a good opportunity to grind for a few levels before moving on to the more difficult Barrows or Erathia. You can fight small groups of goblins, then retreat and rest, and come again to resume the fight. At first they seem to respawn constantly, but after some time their numbers begin to dwindle. And maybe an odd trip to the Arena for the lowest-level fight isn't a bad idea.
