Divine Divinity and as Alias already mentioned NWN Diamond. Also, if you liked Witcher and the more action-y side of RPG's, you'd probably like Vampire:the Masquerade Redemption (yes, there was a VtM game before bloodlines that no one played). Get the platinum hits version, it should be cheaply available on ebay.
Divine Divinity looks like a Diablo clone, but it's not. It's a very deep RPG. Give it a shot. They sell the jewel case at best buy for $9.99. That's the only major AAA CRPG you haven't played on that list besides Morrowind and KOTOR.
Morrowind is significantly better than Oblivion, even if combat is lukewarm compared to its sequel. I'd give it another shot.
Icewind Dale is hit or miss. It's too action-y for me and I always found the difficulty crippling, but it's a well made series if you go in for that. Graphics were very unimpressive for when it came out.
Oh, you may also like Temple of Elemental Evil. Good, but not great. You seem to like DnD stuff. It was done by Troika (the folks who did Arcanum VTM:Bloodlines). Make sure to downlaod the community patch./ Otherwise the game's buggy as hell. ToEE is probably the closest game ever made to the tabletop, but that makes it slower paced than other DnD games. Has a very strong cult followong, but you may hate it. One of those love it or hate it games.
Oh, have you played Knights of the Old Republic? If not, buy now. One of the best CRPGs ever.
I ditto the Dark Messiah recommendation. Buggy, but underrated especially if you like Deus Ex gameplay style. It's not as good as Deus Ex and is not really an RPG, but it's a pretty fun game.

Fable series always felt more Action than RPG to me. Some of the skills were just awful and it wasn't a truly open world game. Number 2 wasn't as bad, but still felt a little bland to me.

Fuck yes. Tales of Arterra was awesome; obviously drew very heavily from BG 1&2 as well as PS:Torment, but still awesome. The Ailund Saga is another good set, as well as just about anything by Stefan Gagne, as long as you don't mind the mods being a bit more offbeat than the standard high fantasy fare (HeX coda and excrucio eternum are the two I'd most highly recommend).
Quite a few good choices have already been mentioned, but one I haven't seen yet that I thought was quite enjoyable was Drakensang: The Dark Eye. I'd also recommend Eschalon: Book 1, and Mass Effect (this is somewhat overrated, IMO, but still good for one playthrough and quite cheap these days). Other already mentioned games that I'd second the recommendation of:
NWN2 + Mask of the Betrayer (OC was meh, MotB was quite good)
KOTOR 1 (second one would have been even better, if they had actually finished it)
TES: Morrowind (+expansions)
TES: Oblivion (not as good as Morrowind, but still decent with enough mods)
Divine Divinity (horrible name, highly underrated, quite good)

well what i hated the most was the fact that you're an old guy by the end of the game.
the skills where nice but some where indeed horrible.
i absolutely hate the fireball because t just sucked.
