Yes, you can put your email there and anyone can redeem the code, the email address doesn't matter.

Like two others before me told you, it's possible; in fact, GOG even enourages it.

(From the website help, "Gift certificates" section)
"5. I want to gift a game to my friend in person, not via a GOG.com e-mail...
The easiest way would be to gift that game to yourself, so you can write down the gift certificate code and give it to any friend. Since you're sending the gift to yourself, you'll find the gift code in the e-mail from GOG.com (although it will be also available in the “Gifted games” section in “My account”) and it can be claimed by anyone you give it to. Just don't forget to tell your friend about the link to www.gog.com/gift!"
