I was looking at the purchasing options for games and noticed that there is no "gift for future date" feature. I think this would be a good features as then I could buy a game as a gift for somebody for their birthday or christmas or whatever date in the future and the recipient of the gift would only get notified on the date instead of as soon as I purchased it.

Is this something that could get implemented?

Already here. Buy the game as a gift, send it to your e-mail. You will receive an alphanumeric code that you can then give to intended recipient when needed.
What JMich said: enter your own email address as the recipient and you can sit on that code for as long as you want. The code will show up in both the email you receive from gOg and also in the My Games section your account, under the Gifts tab. You then PM or email (or snail mail if that's how you roll) the 16-digit code to the recipient. That person redeems the code by following this link: https://secure.gog.com/redeem

I think there was one case - and someone will chime in to show me that I'm wrong - where a user's gift code went 'bad' because a game got pulled from the catalog before the code was redeemed, but that's the exception and not the rule.

But yeah, I usually sit on a code for a few months before I give it out to someone.

Two such cases so far.
1) Fallout. Those gift codes were blocked due to abuse, not the games being removed.
2) XIII. The gift codes stopped working for a few days after the game was removed, but support did admit that was an error, and gift codes continued to work later on.

Basically, I know when I see a good deal on a game, I like to nab it if it is a game I want. But when I see a game for somebody else, I think I should nab it and save it... but by the time their birthday/christmas/other holiday rolls around, I've likely misplaced the email.
OR I'll have forgotten that I had that gift for them.
Either way, I was hoping there was a semi-automated system for this, but I guess not. I'll just have to create the semi-automated system on my local machine (ie windows scheduled task to fire off the code to whomever on the appropriate occation).

It doesn't matter if you loose the email. The gift code will also be in your acount (My Account -> My Games -> Gifts).
