I've been thinking about a classic RPG series, but can't remember which one it is. I do, however, remember some details that should be enough to uniquely identify the series:
* There is a town named Skara Brae.
* In at least one of the games, the town Skara Brae is in ruins. (I believe it was one of the later games in the series.)
* There's an NPC named Hawk-something-or-other (don't remember exactly, but his name started with "Hawk").

So, anybody know which RPG series I've been thinking of?

Ultima.
Skara Brae is from The Bard's Tale

It's from both, actually. Ultima and Bard's Tale had a designer that loved the place (it's also a real world location).

I never played the Bard's Tale, I know the remaster is on gog, worth a play?
Sounds like you're thinking of the original Bard's Tale trilogy. Skara Brae is a major city in the first game, and reduced to ruins in the third game. The third game also has an NPC Hawkslayer.

The original trilogy is a vital part of gaming history, and has been expertly remastered. It's a classical dungeon crawler and a must play for fans of the genre. However, I'm unable to dissociate it from nostalgia, so take the recommendation with a grain of salt. If you love Might and Magic or Wizardry there's no question, though, buy them and rejoice. Otherwise I'd recommend previewing it on youtube first to get an idea of what to expect.

There's a Hawkwind in Ultima also:

It is most definitely worth a buy!

hmmm kinda low on funds atm, maybe in the new year I'll pick it up.
Haha, strange.
There is also a character in the original Wizardry canon named Hawkwind. I think he was a ninja.

Oh wow. I just had to look it up to verify I was thinking of the right thing, and sure enough: Hawkwind from Wizardry 4 also comes from a place called Skara-Brae.

I'll just chime in... the Bard's Tale Trilogy remaster really shows how it's done. Keeps the original spirit alive, improves visuals and sound (but building upon the original), and adds a ton of improvements and convenience features (which can be turned off).
