ugh decisions, i wish i could just hire somebody to make them for me.
I haven't play Pillars yet, but Tsioque is bit complicated for me.... I'm not so used to point and click puzzles, so to speak. Have both on steam.
I refuse to play a game I can't pronounce. :P

I haven't play Tsioque yet but I do have played Pillars of the Eath and I don't recommend it if you are looking for a point and clik game. It is very similar to The Walking Dead however you can interact a little bit more with the characters and objects than in TWD. The strong point of Pillars is the story, it's really good and interesting.
I would have bought Tsioque at release, if I could.
About Pillars of the Earth... I'm usually not a big fan of games derivated from other media, i'd rather read the book. That's not a solid argument though, just my personal preferences.

If it's all the same to you, get Pillars, because it has so much more replay value. (The book has cult status in my neck of the woods and I think it's been adapted reasonably well.)

I also faced this dilemma. Ended up buying both :P.
Tried to the the book (Pillars of the Earth) and hated it (which is really rare). So I'm all for Tsioque ;-)
