This definitely brings old memories. At first I could not even recognise it but I am sure I have played this nearly 30 years ago. I still remember the starting screen "Parker Brothers Presents"

Missing one key feature - the ability to play the original unaltered levels. I'm all for updating and improving, but the original experience should always be preserved.

Or at least the description doesn't mention, whether it's possible.

The true Montezuma's Revenge is when you try drinking the water. Scary stuff!

That's the original version of the game, with a few QOL improvements and updated graphics you can toggle. This new one is more like an expanded remake in which the creator implemented a boss fight that he couldn't fit in the original, along with several new gameplay elements.
Does this one have a modern / retro graphics toggle like the other one? I did not see it demonstrated in the video.

it is not mentioned anywhere, also in the main menu where it was in previous version. Demo can be found here:

Nope. Maybe there will be a future update with this feature, but current version has only retro mode.
