Well, I'd definitely recommend TIE Fighter/X-wing combo. Freespace series is also great. Wing Commander III and IV are good choice. You can get them all here on GOG. Aside from that, X-wing: Alliance. They are all space sims, but should give you hours of fun, even if you're looking for modern aircraft sims exclusively.

To the games listed above good flight sim is Strike Commander.

Also while not flight sim but futuristic flight racing game joystick is very useful if not mandatory in Slipstream. ;-)
