Your an obvious spammer. There is no scam. There is no data collection. The client (which I also dislike) is completely optional. You can download any game you want as simple files, no connection to the net outside downloading the installers. Once you have those files you never need the internet again. They do collect a bit of information to setup the account, as any web store does, and payment information, that is all you need to provide. I am sure if you sent a support message they would happily close your account if that is what you want. Your lack of broadband speed has nothing to do with gog (unless you are downloading files), and you should be able to remove galaxy without any issues.
As for going back to steam, or one of the other stores, it far more likely they are data scraping as internet connection is required for a lot of their products, it’s the main selling point here, drm free, get your files and they are yours to keep.
But if that’s a scam, then go with blessing.
