ReynardFox: Whenever discussion happens about games that people feel should be here by now but aren't, or when one with actual limited appeal or low quality somehow gets onto the store people will often add snarky comments about things being "niche".

Yeah there are, that running gag didn't come out of nowhere.
Way more outlandish correspondence was "leaked" by studios that got rejected. I can't remember which game it was for, but there was one case where gog supposedly replied to an applicant that they won't be releasing their game, but might reconsider if it does well on Steam. It came across way more uppity than I can replicate it here (something along the lines of "let's see if it still makes sense for us to release it after it's out on Steam"), but if I was an indie dev, I'd probably also be like "Fuck these guys, I'm already raking in the big Steamdough, so these guys can bite me!"
